I have a jar of black-eyed peas. What should I do with them?

Make some rice. Chop some onion, some cilantro or parsley, a hot chile if you wish, and cut up a lime or lemon.
Heat the black-eyed peas. Put a heaping portion of rice on one side of a shallow bowl and ladle the peas with their liquid next to the rice (or on top, if you prefer). Sprinkle on the onion, etc. & enjoy.
You could instead make a salsa of yogurt, minced chile & salt. The cool spiciness on top of the hot rice & peas is lovely.
If you have any of the nice duck fat or confit you've talked about in the past, you could heat that with the peas.

thanks, that sounds lovely. Unfortunately, I'm out of duck fat. Will be fine without it.
