My sister recently sent me her link to a pasta dish from Martha Stewart. Tonight I used the technique as a guide but upped the liquid. I used chicken stock instead of water and added lots of herbs like parsley, sage, rosemary and the obligatory basil. I also added chopped green and red peppers, a large diced mushroom, and in the onset of cooking this dish I sauteed my diced onion because Jean-Pierre would have liked that. (He is my hero chef). This vegetarian one pot plan can easily be made for carnivores by adding chicken or beef.

I am incapable of making "one pot" dishes, which I transform into brown or grey sludge, except for chili con carne.

That was my reservation about Martha's dish, as I couldn't imagine the onion would come out as anything other than wet, partly cooked onion. I don't know if you've watched this chef yet. I like his voice & the smooth way he goes from one thing to another, although sometimes he is just plain silly. I make one pot wonders a lot! It's easy so long as you don't overcook it into a sludge..last night I made a chicken curry and added washed rice 15 minutes before I dished up rather than cooking it separately.....slurp...

'Thanks Bixa. Never heard of that chef. One thing I adore about Jean-Pierre is that he emphasises over and over that you as the cook must make the dish your own. If you don.t like this or that....no sweat change to something else. I will watch all this guy has to offer and make it my own accordngly. Fatal mistake alert!! This chef uses the zester the wrong way. He has to keep checking he is not zesting the pith....Oh Jean-Pierre you showed us ! Not critting just observing..

Noted, and I'm sorry if I sounded critical but I have learnt so much from dear Jean-Pierre that I seem to notice things immediately. I was not aware Rea was not trained to which he gets my applause for going out there and showing people 'your way' regardless of it being right or wrong. I will be going through some of his recipes to find one that takes my fancy!
