I had a bowl of chicken meat in the refrigerator which I had stripped off boiled chicken wings a couple of days ago. I mixed it with chopped green onion, chopped celery, puréed garlic, salt and pepper. Stuffed in a baguette, it made a perfect summer sandwich.

I had a shredded chicken fillet, cold baby potatoes, lettuce, cucumber, radish, orange pepper and coleslaw in a bowl...afterwards I had a rocket ice lolly.

I made a Greek salad that was absolutely perfect for a day that is going to be very hot, especially since there is enough left for dinner.

A couple of days ago I made fresh, just-off-the-vine blackeyed peas for lunch. Picked them, shelled them, then realized I should trot down the street in the heat to the pork store for bacon. Sauteed onion, garlic, & a little hot pepper in lard with the (very lean) bacon, then added homemade chicken broth & the beans. I had it soupily mounded next to steamed white rice and honestly had to close my eyes with pleasure while eating. Fresh field peas were a summer joy my whole life in the US, but it's been years since I've enjoyed them.
Today I had another nostalgia-packed treat for lunch -- chicken gumbo.
This backyard garden thing is totally life enhancing!

Really, the pork inclusion was mostly to make the trip down memory lane complete. I like legumes very much and find something like a plain bowl of field peas or lentils dressed with just good olive oil, salt & pepper, and a squeeze of lime or shake of hot vinegar to be ambrosial.

Same here, though my oft-mentioned white acre peas are my favorites. They’re no longer in season here, but I’m now feeling the need to find some. Somewhere. Even if they’re frozen. Certainly no comparison to fresh!
I’ve been eating a lot of lentils this past year, and have found French green to be my favorites. I made up a big batch and finished them up for lunch yesterday.

Lentils are great -- so unassuming, yet delicious. I also make up a bunch at one time. They can always be frozen. I don't know the French green, but there is a really tiny little lentil here, sold in bulk, that I love. The next time I come to the States I will try to find seeds for white acre peass.

It took me 25 years to accept to eat black eyes peas, yet I have always eaten every other kind of bean or lentil. I think I suffered from one of those childhood aversions along the lines of "I don't like the black bit!" As for green lentils, they are the most celebrated kind in France, even if brown lentils are more common.

For some reason I was particularly hungry so as I’m on my own this weekend I cooked up bacon, tomatoes, mushrooms and onion followed by an apple off my tree. Washed down with the end of a bottle of Malbec.
And I’m now hungry again!

If you'd have had a normal carbohydrate with that do you think you might have lasted longer?
For my lunch I boiled and mashed some potatoes, mixed in some fried onion and cubes of corned beef and then fried the lot like a big patty. On the side was pickled red cabbage and pickled onion.

We have our main meal at lunchtime. Our family group will be reduced from 6 to 2 later on this afternoon so lunch will be small "grenaille" potatoes in the oven with olive oil and Provence herbs, fresh cod fish and peas.
