Today I had cold chicken with mayonnaise, a calorific horror but which tasted pretty good. I have to get rid of the damned chicken before I leave on a trip. I should never buy a whole chicken because I get tired of it very quickly. Well, next time I will freeze part of it.

Or you could freeze the leftover pieces carcass and all so that it would be ready to dump into a soup pot with vegetables when you have the time.

today's lunch was the third this year we got mcdonald's food ... a new record. we wanted to get some food at the train station to take along, and when agnes heard that mcdonald's is an option, there was no way past it ... i ordered a cheeseburger, fries, and some sweet thing filled with cherry sauce. they forgot my fries though, but i had some of agnes' fries (she had a happy meal).

An elaborate salad, with romaine, spinach, purple cabbage, yellow sweet pepper, cucumber, onion, hard cooked egg, crisp bacon, blue cheese crumbles, garlic vinaigrette. Did I miss something.

Our Greek baker man that sells his wares from the entrance of my shop brought us some Pastitsio. I made a Greek salad to go with the pasta dish.

Yes, absolutely. His was not as generous with the meat as this photo shows. But he did give me some real oregano plucked on the hills of Lesvos. That went into my Greek salad. I don't like raw garlic so fried the chopped garlic in olive oil until just a golden colour. When cool poured the whole lot onto the salad. cookpad.com/us/recipes/359783-pastitsio-greek-pasta-bake

We have a cleaner come twice a week. She works 8am to 4pm and has an hour for lunch. Today she is teaching my daughter how to make a favourite/traditional dish of nshima and kapenta so she can be a good Zambia wife.
(Nshima = goes by many names such as pap, sazda and ugali depending on African country, but is maize flour/corn meal usually mixed with water to a thick consistency, like a set porridge - very bland carbohydrate. Kapenta = small African fresh water sardine originating in Lake Tanganyika but also now grown in Lake Kariba, also called daaga or ndgaa depending on country - good source of protein which when dried supposedly has nearly three times as many calories as fresh kapenta, and nearly four times the protein)
